In the 24th TechTalk, Prof. Dr. Patrick Rühs from ETH Zürich introduces us to new food processing principles which, according to their claim, unlock the full chemical, biological, and nutritional potential of plant raw materials. The principles reframe food engineering and offer a roadmap towards healthy and sustainable plant-based foods.
